Litti Chokha

No journey into Bihari cuisine is complete without the world-famous Litti Chokha. Handcrafted whole wheat dough balls are stuffed with spicy, seasoned sattu (roasted chickpea flour), roasted over open charcoal flames until perfectly charred on the outside, and dipped generously in warm molten desi ghee. Accompanied by a traditional trio of smoky chokhas—mash made from coal-roasted eggplants, tomatoes, and potatoes infused with raw mustard oil, garlic, and green chillies—this iconic platter offers a symphony of rustic, earthy, and fiery flavors. Every bite is an authentic tribute to traditional wood-fired, heartland cooking.

Daal-e-Dhungar

Delicate, flavorful, and deeply satisfying, our Kachche Kele ke Kebabs offer a luxurious vegetarian option inspired by traditional courtly kitchens. Raw green bananas are boiled, smooth-mashed, and seasoned with roasted cumin, fresh mint, ginger, green chillies, and a pinch of fragrant royal allspice. Shaped into silky patties and shallow-pan-seared in ghee until a golden, thin crust forms on the outside while remaining incredibly soft within. These kebabs melt away on your tongue, leaving behind a subtle, spicy, and herbal finish. Served with sweet tamarind and fresh mint chutneys, they are a true vegetarian luxury!

Experience lentil comfort reimagined through the ancient art of dhungar smoking. Slow-cooked overnight over low embers, our yellow and black lentils meld with caramelized onions, ripe tomatoes, fresh ginger, and a delicate blend of rustic spices to create a velvety, rich curry. Just before serving, the daal is infused with live charcoal smoke and tempered (tadka) with hot desi ghee, aromatic cumin seeds, garlic, and whole dried red chillies. The result is a intoxicatingly fragrant, silky dish infused with a deep, wood-fired smokiness that pairs blissfully with hot steamed rice or flaky breads. Pure, soul-soothing magic in a bowl!

Sattu Kachori

Each pocket of delicate pastry is stuffed generously with a spiced mixture of roasted gram flour (sattu), infused with pickled mustard oil, lemon juice, green chillies, kalonji, ajwain, and freshly chopped garlic. Fried to a perfect crunch, these puffy kachoris burst open to release a fragrant, tangy, and savory filling that satisfies all your cravings. Served with a side of lip-smacking sweet-and-sour tamarind chutney and spicy potato gravy, it’s the ultimate traditional snack for those who crave bold, rustic Indian street flavors!

Kayastha Style Mutton

A crown jewel of Kayastha royal dining, this slow-cooked mutton curry is a masterpiece of culinary patience. Prime cuts of tender meat are marinated in yogurt and rare spices, then slow-simmered (bhuna) for hours in pure mustard oil alongside sliced onions, whole gararn masala, and black cardamom. As the gravy darkens into a rich, velvety consistency, the mutton absorbs the spices right to the bone, rendering it melt-in-your-mouth tender. Layered with complex aromatics and a deep, spicy finish, this regal dish embodies the opulent, rich legacy of Kayastha feasting at its very finest.

Kadhai Bhuna Murg

Tender morsels of juicy chicken stir-fried and slow-simmered in a thick, intensely flavorful gravy crafted in a traditional iron kadhai. Our Kadhai Bhuna Murg is cooked down until the spiced onion-tomato base tightly coats every tender piece of meat. Crushed whole spices—coriander seeds, dry red chillies, and black pepper—are roasted and tossed in to release an intoxicating aroma, while fresh green bell peppers add a delightful crunch. Rich, spicy, and deeply caramelized, this dish delivers an explosive burst of traditional flavor with every single bite. Perfect for scooping up with hot naan or buttered parathas!
